Hungarian Gundel Crepes

Ingredients for the batter:

¼ cup Sugar
2 Eggs
1 Lemon, zested
1 teaspoon Vanilla Extract
2 cups Flour
½ cup Soda Water
1 ¼ cups Milk
A pinch of Salt
2 tablespoons Oil

Ingredients for the filling:

½ cup Sugar
¾ cup Cream, such as nougat cream
4 tablespoons Rum
2 cups Walnuts, 1 cup finely chopped, 1 cup ground
1 Orange, zested
1 teaspoon Cinnamon Powder
¼ cup Raisins, soaked in lukewarm water

Ingredients for the chocolate sauce:

3.5 ounces Dark Chocolate
1 cup Milk
3 Egg Yolks
¼ cup Cocoa Powder
6 tablespoons Sugar
3 tablespoons Rum
2 tablespoons Butter
1 teaspoon Vanilla Extract
¼ cup Butter, for frying

Instructions:

To prepare the batter:

  1. Combine the sugar, eggs, lemon zest, and vanilla extract.
  2. Gradually add the flour, soda, salt, and milk, stirring continuously. Make sure you combine all the ingredients well so that the batter is smooth and thick.
  3. Mix in the oil and keep the batter in the fridge for at least two hours.
  4. To prepare the filling:

Add the sugar and cream to a saucepan. When it begins to boil, reduce the heat and add the rum, walnuts, orange zest, cinnamon, and raisins.

  1. Cook for about 3 minutes over low heat stirring continuously.
  2. Remove from the stove and allow to cool.
  3. Take the batter out of the fridge and fry the crepes as you would usually do.
  4. Fill the crepes with the prepared filling and set them aside.

To prepare the chocolate sauce:

  1. Fill a pot with water and set a metal bowl on top of it and bring it to a simmer.
  2. Add the chocolate and milk to the metal bowl. Melt stirring continuously.
  3. When the chocolate has melted, remove the pot from the heat and add the egg yolks. Use a flat egg beater and whisk quickly to combine.
  4. Mix in the cocoa powder, sugar, rum, vanilla, and butter.
  5. Set the pot back over the pot of simmering water for 5 more minutes.
  6. If the sauce is too thick, pour in a little milk.
  7. Add the butter to the pan, melt and fry the crepes on both sides until nicely golden.
  8. Drizzle with the warm chocolate sauce and serve. Enjoy!
