A classic dish enjoyed by Australians. It is flavorful and hearty, enough to feed 8 hungry people.
4-5 pounds Lamb Leg, fat trimmed
¼ cup Olive Oil
1 tablespoon Finely Chopped Fresh Rosemary Leaves
2 Garlic Cloves, minced
3 pounds Potatoes, peeled and sliced into rounds
Preheat your oven to 400F(200C).
Grease a roasting pan and place the lamb in the pan.
In a bowl, whisk together the olive oil, garlic, and rosemary. Pour the mixture over the lamb, rub gently and season with salt and pepper.
Place the pan in the preheated oven and roast for about 15 minutes.
Reduce the temperature to 180C and continue roasting the lamb, basting it with the remaining olive oil mixture every 20 minutes.
About 40 minutes before the lamb is cooked to your liking, add the potatoes and continue roasting until cooked through.
- Once done, remove from the oven, cover with foil and leave to rest. After 10 minutes, slice the lamb and serve.
