INGREDIENTS FOR THE BATTER:
4,5 ounces Butter, softened
1 cup Caster Sugar
1/2 teaspoon Vanilla Extract
1 3/4 cups Self-Rising Flour
1/2 cup Milk
2 cups Desiccated Coconut
INGREDIENTS FOR THE ICING:
3 1/2 cups Icing Sugar Mixture
1/4 cup Cocoa Powder
1 tablespoon Butter, softened
1/2 cup Boiling Water
Preheat your oven to 180C. Grease a baking pan (approx 20x30x3 cm) and line it with parchment paper.
Beat the butter, vanilla, and sugar using an electric mixer. Once the mixture gets fluffy, add one egg at a time and mix well until the ingredients are incorporated well. Add half the flour and stir gently. Pour in half the milk and stir again to combine well.
Transfer the batter to the prepared pan and bake in the preheated oven for half an hour. Once done, leave to cool for about 10 minutes, pop it onto a wire rack and leave to sit covered overnight.
To prepare the icing, combine the cocoa and sugar and add the butter and boiling water. Mix well to get a smooth mixture and set aside.
- Cut the cake into 15 squares and deep each piece into the bowl with the icing and then toss in coconut. Set aside to set before serving.
